Vegetable Soup
Ingredients 1 tbsp olive oil ˝ onion, peeled and chopped ˝ leek, chopped 2 garlic cloves, peeled and chopped 1 carrot, peeled and chopped 200g/8oz broccoli, cut into florets 400ml/14fl oz vegetable stock salt and freshly ground black pepper. Method 1. In a large saucepan, heat the olive oil.2. Sauté the onion and leek for 2-3 minutes. 3. Stir in the garlic, carrot and broccoli. 4. Pour in the stock and bring to the boil. Boil for approximately 5-6 minutes or until the vegetables are tender 5. Carefully transfer the soup to a liquidiser and blend. Season.
